Pizzoccheri are an ancient specialty of Valtellina: it is a traditional pasta with buckwheat flour and durum wheat flour. The processing of these two ingredients, in addition to characterizing the taste profile, leads to the creation of a rough sheet, which is then cut into short strips. This product is the main ingredient with which to make the typical dish of Teglio.
Specifically, the classic recipe calls for boiling the pasta together with potatoes or vegetables such as cabbage and chard. Once cooked, they are seasoned with melted butter, flavoured with garlic, and diced Casera and Bitto DOP cheese. A quick bake and the typical 'Valtellinese' dish is ready to be enjoyed.
