Cetara anchovy sauce is a traditional Campanian agri-food product produced in the small seaside village of Cetara, on the Amalfi Coast, by the Delfino Battista company. It is a traditional amber liquid suitable for enriching various dishes, produced by a traditional process of maturation of anchovies in salt. The anchovies used are fished near the Amalfi Coast.
The unique flavour and patient production process have made it a symbol of the industriousness of entire generations who have passed down, from father to son, the art of salting and then filtering the intensely flavoured liquid, the result of the expert seasoning and pressing of salted anchovies.
Colatura di Alici di Cetara is healthy, digestible and rich in vitamin A and can be enjoyed with a few fresh herbs such as: parsley, garlic, chilli pepper and a good extra virgin olive oil, naturally mixed at the moment for seasoning linguine or spaghetti al dente but also as a condiment to flavour, instead of salt, the various dishes that we find on our tables every day. Before being used as a condiment, it must be mixed with extra virgin olive oil in a measure of 1/2.
