Chickpeas are a legume with a pale yellow color, a rounded shape, a smooth or rough surface depending on the variety and a pasty taste. They are also a food rich in fiber and high in protein: if combined with whole grains, which compensate for the lack of methionine and cysteine typical of legumes, they allow our body to have all the essential amino acids.
From a culinary point of view, chickpeas often play a leading role in the creation of first and second courses. One of the oldest recipes in our gastronomic tradition is precisely “Pasta e Ceci”, but they are not to be disdained in the preparation of soups, creams and cold salads. The only “sore” note is the longer cooking times compared to other legumes: in fact, it is advisable to soak them for about 12 hours.
